Catalyst restaurant was a unique project where RealFood played an extensive role from the developer’s early vision of having a top operator in an exciting location as part of a mixed use retail development vision. Understanding the need to identify a highly qualified, top performing chef to make the new restaurant space an anchor for the development, RFC managed an extensive RFP process to identify a refined group of final candidates. From there, working to make final selections, Chef Kovel was the clear choice providing world class culinary ability, business acumen and a deep understanding of the marketplace. With the operator selected, RealFood moved forward to develop William’s vision for the restaurant. Working closely with the chef to understand how he
ran his kitchen, the level of “show” he desired and the need for a multi-zone operating model to support the extensive function capabilities of the mixed use space, our team went to work. In concert with the architecture team, RFC coordinated flow and functionality of all areas. Building on this platform, the RealFood team completed full food service design, specification and fabrication details to make chef’s vision a reality. Effectively managing the bid and procurement process, coordination of foodservice construction details and equipment installation, the restaurant came to be – on time, on budget and to critical acclaim. The foodservice design was selected as a feature project by FE&S magazine, receiving extensive coverage in the February 2012 issue.
