When David Doyle, a long time resident and owner of an indy record and bookstore saw the changing climate of retail, he wanted to create a new “hook” and a great addition to the Center St community in Boston’s Jamaica Plain area. His passion for Spain and Spanish food led him to the idea of a true tapas bar. Given David had no restaurant experience and the building that would be home to the compressed retail store and the new restaurant was an old Victorian home, he knew he would need some help. David reached out to RealFood Consulting to help shepherd him through the process.
RealFood quickly engaged with a broad range of services, including business planning, assistance with capital sourcing at the onset. From there, RFC worked to round out the team with general contractor selection and design/development assistance, working with David’s architect who had little hospitality experience. Continuing services included foodservice facility design and specification, equipment procurement and construction coordination. While old buildings sometimes can throw a curve, and this was no exception, the team identified, addressed and resolved each challenge as they came up and delivered a top quality, distinctive facility. Tres Gatos opened to huge crowds and great response, especially considering the small 40 seat capacity. Small space? Big challenges? Realfood brings the team with the solutions.
"Ed Doyle and his team bring an invaluable set of skills to any restaurant design project. Their services range from overall concept scrutiny, critique and tweaking, to equipment layout and sourcing, to timely onsite consultation over the inevitable problems and challenges encountered during construction. Ed brings a great deal of industry experience and a sharp eye to each project, and truly understands that each project much be approached on its own terms. He and his team are calm, focused and efficient, and a pleasure to work with. He was instrumental in the planning and build-out of both Tres Gatos and Centre Street Cafe, and I would not contemplate another restaurant project without his involvement."David Doyle, Owner - Tres Gatos
