RealFood was selected as the foodservice design partner on a new, intimate 25 seat concept envisioned by chef-owner, Peter Ungar , to redefine the dining experience. RFC worked with McMahon Architects to develop a space that created a stage where the culinary team and its creations blended seamlessly withe the guest’s dining experience. Working within a stark industrial space, the team, including contractor BHaley Designs, created a truly unique space while working within a highly aggressive budget for overall development. RFC integrated cutting edge culinary technology to support the chefs highly crafted culinary style while incorporating front of the house finishes and unique details to bring the guest into the experience of creating the meal. RealFood provided a range of services to make this project a success, including:
- Early stage pro-forma development budgets
- Design of a custom induction cooking suite to support the all-electric operation
- Ergonomic studies of space and flow of kitchen
- Value engineering of project with no sacrifice in functionality or style
- Extensive construction coordination to support design-build construction
The resulting team effort delivered a truly unique space to achieve Chef Ungar’s vision and create a differentiated customer experience. It took 3 years to bring Tasting Counter from concept to reality. During that time Ed Doyle and the RealFood team were invaluable resources whom I trusted time and again. Our restaurant concept is unique and while many consultants were wary of such a novel idea, Ed was very supportive from our very first meeting and continued to encourage me even when the project encountered seemingly impossible obstacles. Ed is the only person (apart from my own parents) who said, 'This is your dream, let's make it happen.' Even despite missteps I made, Ed helped me persevere and keep the end-goal in sight. Now that we're open, we receive endless praise from our guests who visit our space for the first time.
