Fiorella’s Italian restaurant has been serving their delectable Italian cuisine for more than 10 years.  Rescently the restaurant underwent a significant expansion and full renovation to refresh the concept and be able to meet the high volume demand they were seeing in the market place. As part of this renovation, the owners contracted with a local foodservice equipment dealer to redesign the kitchen operation and equip the restaurant for the anticipated increase in sales. After completing the renovation and reopening, it was immediately apparent that there were significant issues with the renovated kitchen. Entrees were taking up to an hour to get to the guests, cooks were unable to efficiently work in the space and the kitchen found itself in total chaos on a almost nightly basis. The owner reached out to RealFood Consulting in hopes of a solution. After a couple of nights of observation and interviews with ownership and the culinary team, it was apparent that the kitchen

needed to be fixed and fixed fast.  It was not possible close the restaurant to fix the kitchen, so our team undertook a multi-phase renovation to build a kitchen facility that matched the restaurant needs. After spending the time with the operations team, RFC redesigned the space, utilizing as much of the existing equipment as possible and adding new equipment where needed. Working with our fabricators and installers to stage equipment and complete multiple early morning and overnight installations, Fiorella’s had the kitchen it needed without losing a single days sales.  After the kitchen renovation, RFC continued working with ownership to refine operations and redesign the menu to maximize the ROI on the new dining space.
