Chef Jason Bond was looking to develop his second location after the phenomenal success of his 28-seat family style location in Cambridge. Chef Bond identified a previous restaurant location in Concord, Massachusetts that was significantly larger than his previous space and enabled him to expand his culinary offering and processes. RealFood consulting worked closely with Chef Bond and his development team to develop a intimate showcase facility, highlighting a showcase kitchen with a stone hearth oven and strong connection to the dining space. Building a space that was designed for how Jason cooks was our highest goal, delivering a space that is a tool with which to delver his craft.
While the highest operational and visual standards were required, the budget – as always – was a defining factor of the project. RFC made equipment specifications that delivered the highest value and top performance. Intensive space planning for cook line enabled reduction of mechanical requirements and further assisted in budget managment. Additionally, RealFood assisted Chef Bond in his effort to secure specifically identified used pieces, providing evaluations of pieces adn making mechanical modifications where appropriate. RealFood worked closely with the general contractor to manage all aspects of the very aggressive budget and in the end, the team delivered a high performing, highly attractive space that met the budget and exceeded expectations..
